Cucumber Salad / Mangalorean Korom recipe

Ingredients
  

  • Cucumber – 1/2 kg
  • Grated Coconut – 1/4th of the coconut
  • Green Chilli – 3
  • Ginger- small piece
  • Garlic -1 pod
  • Mustered Seeds- 1/2 tbs
  • Coriander leaves- few
  • Tamarind – small piece
  • Salt – as per the requirement

Instructions
 

  • To eliminate the bitterness from the cucumber, start by cutting off the edges, then take the chopped pieces and rub the cut ends together.For more clarity watch the video
  • Peel the cucumber and remove the seeds if it is overgrown; otherwise, you can leave the seeds intact.
  • Chop the cucumber into small pieces.To remove the water content from the cucumber, place the chopped cucumber in a bowl and add 1/4 teaspoon of salt.
  • Mix well; this will help release the water from the cucumber. Save the released water for grinding the chutney.
  • To prepare a chutney in a jar, add grated coconut, a small piece of ginger, green chilies, a garlic pod, a few coriander leaves, a small piece of tamarind, and half a tablespoon of mustard seeds, add saved water and grind coarsely.
  • Add this chutney to the cucumber bowl and mix it well using hands
  • Delicious cucumber salad/Korom is ready to serve.
