Wash the chicken thoroughly.
For the first marination, add salt, curd, and turmeric to the washed chicken. Combine well and let it rest for about 30 minutes.
In a bowl, mix hot water with ginger garlic paste and Xtra Flavours Ghee Roast Powder to form a smooth paste.
Heat ghee in a kadai, add curry leaves followed by cashews, and sauté well.
Add the marinated chicken and fry in ghee until the outer layer of the chicken turns white.
Cover and cook for about 7 minutes.
Add the prepared ghee roast paste and cook until the chicken is well coated and cooked through.
Finally, add jaggery to balance the flavours and cook for a few more minutes.
Note: After cooking the chicken, check the salt and adjust if required.
